Temperature Control System
One of the main functions of fermenters is fermentation - a process from wort to mature beer. Therefore, there are quite strict requirements for temperature control. A good fermenter design first needs to consider the temperature control system. The basic structure of the temperature control system fermenter is generally divided into four layers.
The innermost is the inner tank, the middle is the jacket for the refrigerant, the jacket and the inner tank are directly connected, the outer side of the rubber sleeve is the foam insulation layer, and the outer wall of the insulation layer is the outer wall of the fermentation tank we see. The refrigerant is circulated through the jacket to achieve temperature control. Whether it is a coil, dimple, jacket, etc., the heat exchange area is the most important. In addition, the thickness of the insulation layer and the uniformity of the foaming inside the insulation layer are very important (the sweating of the fermentation tank in summer is caused by the failure of the insulation layer). This not only saves energy but also makes it easier to control the temperature.
Fermentation Tank Features
a. The bottom is conical to facilitate the discharge of yeast at any time during the production process, requiring the use of cohesive yeast. The included angle of the conical bottom is generally 60º~90º, but this is mostly used for large-capacity fermenters. The height of the conical bottom of the fermenter is related to the included angle, the smaller the included angle, the higher the part of the conical bottom.
b. The tank body is a cylinder and is the main body of the tank. The height of the fermenter depends on the diameter and height of the cylinder. Due to the large diameter of the tank and the low pressure resistance, the diameter of the general conical tank does not exceed 6m. The outside of the tank is used to install cooling devices and insulation layers, and a certain position is reserved for installing temperature measuring and pressure measuring components. The cooling layer of the tank part has various forms, such as coil, dimple, jacket type, and is divided into 2 to 3 sections. It is connected with the inlet pipe of the cooling medium by the pipeline, and the cooling layer is covered with insulation materials such as polyurethane foam plastics.
c. The top of the tank is a circular arch structure, and the central opening is used to place a detachable large-diameter flange to install CO2 and CIP pipes and their connections. Anti-vacuum valves, overpressure valves and pressure sensors are also installed on the top of the tank, and a washing device is installed inside the tank.
d. Fermentation tank manhole: The function of the manhole is to facilitate entry, maintenance and feeding. In addition to considering your own existing objective conditions, you have to make judgments based on the actual situation.
The "side manhole" has a beautiful appearance and is convenient for cleaning and inspection of the inside of the fermenter.
Disadvantages: easy to leak beer, the longer the use time, the problems will be highlighted, especially in cleaning and pressure preparation, there will be leakage of cleaning water and pressure leakage due to the problem of poor sealing. The "upper manhole" will have a relatively innate advantage in this respect.
Inner wall polishing and pickling passivation
The inner surface should be as clean and smooth as possible to ensure no hygienic dead ends.
Dry hops port
The dry hops are usually added after the main fermentation is over. At this time, the tank has been sealed for a period of time, and the CO2 produced during the fermentation process has been partially dissolved in the beer body. You may think of adding hops after exhausting the pressure, so it is recommended to configure an isobaric dry feeding device, otherwise carbon dioxide needs to be charged again later, causing waste.

To add a racking arm, it is more convenient to beat wine at the bottom.
Response valve
Positive and negative pressure valves (to prevent vacuuming) mechanical pressure water seal regulating valves (pressure protection, to adjust the tank pressure, it is best to adjust the internal pressure, so that the pressure can be controlled accurately, which is very important for the dissolution of carbon dioxide.
